Recipe: Toad in the Hole

Ingredients:
1lb of Sausages, Traditionally Pork, although any type of Sausage is acceptable
1 egg
1/2 a cup of Self Rising Flour
1/2 teaspoon of Salt
A pinch of finely powdered Sage
1 cup of Milk
Some Sausage Drippings (Cooking oil could also be used but will not have the same flavour)
 
Directions:

1. Sift together dry ingredients and the add in the egg.

2. Gradually stir in Milk making sure there are no lumps. Let mixture sit for an hour.

3. Prick sausages all over with the tip of a pealing knife, and then grill them in a skillet. Save the drippings or sausage grease for later use in a square corning ware dish. About 4 tablespoons of grease is acceptable.

4. Preheat the oven at 450 degrees. Once the sausage is cooked, set it aside and then place the corning ware in the heated oven. The grease should be spitting hot.

5. Place the sausages into the grease, then add the batter quickly over top of the meat. Bake for approximately 30 minutes, until batter is risen and crispy brown.

6. Serve quickly from the oven while the dish is hot.
 
Notes:  A very traditional English dish, consider side dishes of broccoli, carrots, peas and or sautéed leeks.  Dark rich brown gravy is also a welcome addition to this meal!
