Recipe: Orange-Mint Wine

Ingredients:
4 cups dry white wine
1/4 cup sugar
1/2 cup of Brandy
Zest or peel of 2 oranges
Some orange slices
1/4 orange or regular mint

Optional:
For Spicy-Peach Wine:
Substitute 6 ripe peaches (skinned, halved, and pitted) for the orange zest and orange slices.

Substitute 1/4 cinnamon basil (or regular basil and one cinnamon stick) in place of mint

Simmer the peaches in the wine-sugar mixture for 10 minutes before adding to jar.

Directions:

1. Combine the wine and the sugar in pan and bring to a boil. Stirring until sugar is dissolved. Remove from heat and cool until tepid.

2. Put orange slices, mint, and zest into a jar with tight fitting lid. Add brandy and wine mixture. Stir.

3. Place jar in cool dark place and allow to steep for two (2) days [Steep for about a month, stirring every few days].

4. Filter and bottle.

5. Add fresh orange peel and mint sprig to bottle before sealing. Will keep in the refrigerator for up to three months.
