Recipe: Rice Pudding

Cultural Influence: British: An old family favourite.

Ingredients:
1/2 cup Pearl Rice
1/3 cup White Sugar
3 cups Milk
A pad of Butter
Optional: 1/2 cup of Raisins
A pinch of Cinnamon and Nutmeg for the top

Directions:

1. Use a bread pan, or something similar. Add rice and sugar first (Raisins too if you’re adding them), then milk.

2. Add a pad of butter, and then sprinkle Cinnamon and Nutmeg over top. If the spices look clumpy, use a fork to stir them around.

3. Bake at 350° for 1 1/2 hours until a darker skin has formed over the pudding. Let cool before eating, add milk or use brown sugar for sweetening.

Notes: My Mum’s favourite of all time. An excellent dessert following meatloaf, or ham and scalloped potatoes. Excellent around Yule time too, it’s one of those English puddings you don’t have to cringe and wonder what’s inside.
