Ingredients:

2 tablespoons Sugar
2 tablespoons Unsweetened Cocoa Powder
1 tablespoon Cornstarch
1 cup of Skim Milk
1 teaspoon Vanilla
2 cups of Light Cool Whip

Optional:
For an alternate light pudding recipe, leave out the Cool Whip
 
Directions:

1. Stir together dry ingredients in a saucepan, and then slowly add milk while whisking the mixture.

2. Heat on medium-high until mixture starts to thicken, add Vanilla.

3. If making pudding, place in serving bowls and set to cool in fridge for 20 minutes.  If continuing with mousse, take mixture off heat and add 2 cups of Cool Whip to the mixture, then place in serving bowls and place in fridge for 20 minutes. 
 
Notes:  Recipe makes 2 servings and may be doubled.  Can be garnished with berries or sprigs of mint, small dabs of Cool Whip also make nice accents.
