Recipe: Blueberry Buckle

Cultural Influence: Pagan Sabbat: An excellent Mabon Dessert!

Ingredients:

Cake:
1/4 cups Softened Butter
1/2 cup Sugar
1 Egg
1 cup Flour
1 1/2 teaspoon Baking Powder
1/4 teaspoon Salt
1/3 cup Milk
2 cups Blueberries

Topping:
1/3 cup Sugar
1/3 cup Flour
1/4 cup Butter
1/2 tablespoon Cinnamon

Directions:

1. Grease an 8” x 8” pan.

2. Cream your butter and sugar together well for you base cake. Beat in the egg, stir in the flour, salt and baking powder. Add milk and mix slowly until smooth.

3. Spread cake mix into pan, sprinkle blueberries as a layer over top of the cake.

4. Mix your Topping ingredients together until they form a crumbly mass. Scatter the topping over the blueberry layer in the cake pan.

5. Bake at 350° for 40 - 50 minutes, colour should be a light golden pastry.

Notes: This recipe came in as an excellent Mabon dessert in Ontario, just as the Blueberry Season came to a close. Blueberries freeze exceptionally well with little to no effort, so saving some fruit for a special Yule treat works out well too. I’ve never tired it with different fruit, but I’d guess apples, strawberries or just about anything would make it truly seasonal.
