Recipe: Lemon Lavender Cookies

Originated From: Recipe adapted from Lavender Heart Cookie recipe in Lavender Practical Inspirations For Natural Gifts, Country Crafts and Decorative Displays by Tessa Evelegh.
 
Ingredients:
1/2 cup unsalted butter, softened
1/4 sugar
1 TBS. organic lavender buds
1 1/2 cups of flour
1 tsp. pure vanilla extract
3 caps of pure lemon extract sugar to sprinkle.

Directions:

1. Grind lavender and sugar together in a spare coffee grinder. Don't use your everyday coffee grinder.

2. Mix butter and sugar mixture together until fluffy.

3. Add vanilla and lemon extracts and mix thoroughly. Add flour and mix well.

4. Form into a ball and wrap in plastic wrap. Refrigerate to chill for 15 minutes.

5. Roll out between two pieces of wax paper and cut with biscuit cutter.

6. Sprinkle with purple sugar.

7. Bake 375 degree F. for 7-10 minutes depending on size of cookie. Let cool for 5 minutes then transfer to wire rack to continue cooling.
 
Notes: Store in an airtight tin.
