Recipe: Ginger Cookies with Brown Sugar Icing

Ingredients:
2 c. sugar
1 c. shortening
½ c. margarine
2 eggs, lightly beaten
½ c. light molasses
4 c. flour
2 t. baking soda
2 t. cinnamon
1 t. ground cloves
2 t. ground ginger
½ t. nutmeg
½ t. salt

Icing:
4 ½ t. margarine
9 T. whipping cream (1/2 c. plus 1 T.)
1 ½ t. vanilla
¾ c. plus 2 T. brown sugar
3 c. powdered sugar

Directions:

1. Preheat oven to 350 degrees.

2. Cream sugar, shortening and margarine. Add eggs and molasses and mix.

3. Sift together dry ingredients and stir into margarine mixture.

4. Make dough into small balls and flatten, placing them on a cookie sheet, 2 inches apart. These cookies DO spread, so don't crowd.

5. Bake in preheated oven for 10 to 12 minutes.

6. Combine all icing ingredients except powdered sugar and bring to a boil, stirring. (You can microwave) Boil for 2 minutes. Cool and add powdered sugar. Spread on cookies.
 
Notes: Makes approximately 78 cookies. Evaporated milk can be substituted for whipping cream.
