Recipe: Handfasting Cake

Ingredients:
1 cup of Butter
1 cup of White Sugar
1/2 cup of Honey
5 Eggs
2 cups of Flour
2 Tablespoon of fresh grated Lemon Rind
2 1/2 teaspoons of Lemon Juice
1 teaspoon of Rosewater
A Pinch of Basil
6 fresh Rose Geranium Leaves
Powdered Sugar
Rose Petals

Directions:

1. Cream Butter and Sugar until fluffy and light.  Add honey, mix well.

2. Add Eggs one at a time, beating the mixture well with each addition.

3. Gradually add the flour, stirring it in with a large wooden spoon.  Stir in Lemon Rind, Lemon Juice, Rosewater, and a pinch of Basil for Love.

4. Grease and then line a 9x5 pan with the Geranium leaves.  Pour the batter over the leaves.

5. Bake at 350°F for an hour and fifteen minutes, or until a tooth pick comes out of the cake clean.  Remove from the oven and let stand at least 20 minutes before un-molding.

6. Sprinkle powdered Sugar and Rose Petals over your cake just before serving.

Notes:  If serving a larger reception, consider serving each table a small Handfasting Cake of their own.
