Recipe: Dandelion Muffins

Ingredients:
2 cups flour
1 tbsp baking powder
1/2 tsp salt
3 tbsp sugar
1 egg, well beaten
1 cup milk
3 tbsp oil
1/2 cup dandelion petals
1 tsp nutmeg
2 tbsp sugar

Directions:

1. Combine the flour, baking powder, salt and 3 tbsp sugar into a bowl and mix well.

2. In a separate bowl combine egg, milk and oil, Add to dry ingredients and stir gently.

3. Using your fingers, break apart dandelion petals until fine, and mix with nutmeg and 2 tbsp sugar. Stir into batter. Finish stirring batter until the dry ingredients are moist but still lumpy.

4. Spoon batter into greased muffin pans, filling pans only 2/3 full. Bake at 425 for 20-25 minutes depending on size of muffins.
 
Notes:
Makes about 18 medium muffins.
