Recipe: Crescent Cakes

Ingredients:
1 cup of Finely Ground Almonds
1 1/4 cups of Flour
1/2 cup of Confectioner's Sugar
1/2 cup of Softened Butter
2 Egg Yolks
1/4 teaspoon of Almond Extract

Directions:

1. Mix almonds, flour, sugar and vanilla until well blended.

2. With your hands work in the butter and egg yolks until the mix is well blended.

3. Chill the dough for two hours or so.

4. Preheat your oven to 325°F.

5. Pinch off pieces of dough about the size of walnuts and shape them into crescents.  Place each crescent on a greased cookie sheet. 

6. Bake for 20 minutes.

Notes:
A light mix that is between a cake and cookie.  For an extra special treat, ice them with an almond paste icing or honey.
