
Recipe: Apple Muffins

Ingredients:
1/4 cup of Softened Shortening
3/4 cups of Brown Sugar
1 Egg, Slightly Beaten
1 1/2 cups of pealed, grated Apple, I prefer Spartan or Macintosh
1/2 cup of Carnation Milk
1/2 cup of Raisins
1 cup of Flour
3/4 teaspoon of Baking Soda
1 teaspoon of Baking Powder
3/4 teaspoon of Salt
1/2 teaspoon of Cinnamon
1/2 teaspoon of Nutmeg
1 teaspoon of Cinnamon mixed with 1/2 cup of White Sugar in a separate bowl.
Directions:
1. In a large bowl, cream together Shortening, Brown Sugar, Egg and Apple.
Then fold in Raisins.
2. Stir in the remaining ingredients.
3. Scoop out evenly into 12 muffin cups, greased or papered. Pour a small
amount of your Sugar/Cinnamon mixture over each muffin.
4. Bake at 375°F for 20 minutes.
5. Serve warm with butter or honey, or plain.
Notes: This recipe does not double well, it's best to make each batch one
at a time.
