Recipe: Crock Pot Pumpkin Tea Bread

Ingredients:
½ cup oil
½ cup sugar
½ cup brown sugar
2 eggs
1 cup cooked, mashed pumpkin (or canned)
1 ½ cup flour
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon soda
1 cup chopped walnuts
½ cup chopped dates

Directions:

1. Beat eggs.

2. Blend in oil and both sugars.

3. Add pumpkin.

4. Mix all dry ingredients together before adding to oil and sugar mixture.

5. Stir in nuts and dates.

6. Pour batter into greased and floured 2-pound coffee can.

7. Place coffee can in crock pot.

8. Cover top of coffee can with 8 paper towels to seal in moisture. Place lid on crock pot.

9. Cook on high 3 hours.
 
Notes:
Do not peek until last hour, or tea bread may "fall."
