
Recipe: Focaccia Bread

Ingredients:
1 1/3 cups of Water
1 1/2 teaspoons of Salt
1 teaspoon of Sugar
3 1/3 cups all purpose/bread Flour
2 to 3 teaspoons of Rosemary
2 1/4 teaspoons Bread Machine Yeast
Optional:
Add a toping of any grated brick cheese in the last 10 minutes of baking, or a
topping of some extra Rosemary on top, with some Oregano and salt and pepper.
(Sea or Kosher salt is preferable!). Create a dipping sauce for your bread
by mixing Olive Oil and Balsamic Vinaigrette in a shallow dish.
Directions:
1. Use your dough cycle on the bread maker, combine and add all ingredients.
2. When the cycle finishes, remove the dough to a lightly floured surface, then
cover with a large bowl and let rest for 10-15 minutes.
3. Divide the dough in half. Stretch each half into a 9 inch oval, and place on
a baking sheet sprinkled with cornmeal.
4. Dimple the bread with flour coated fingers.
5. Cover and let rise in a warm, draft free place for 30 minutes or until not
quite doubled in volume.
6. Re-dimple dough, brush with olive oil and add your favourite topping. If
you're adding cheese, wait until the break is almost baked or you'll burn the
top of your bread!
7. Bake at 375 for 20-30 minutes. At about 10 minutes until done, add your
favourite brick cheese on top. cheddar is delicious!
